Estudio de un brote de enfermedades transmitidas por alimentos.
Abstract
Se realizó un estudio epidemiológico observacional descriptivo para conocer algunas características clínico higiénico epidemiológicas de un brote de Enfermedades Transmitidas por Alimentos ocurrido en el Hotel Senador Cayo Coco el 10 de Mayo del 2003.
Se pudo observar que el grupo de edad más afectado fue el de 15-44 años, el período de incubación promedio fue de 8 a 12 horas, los síntomas y signos predominantes en el brote fueron las diarreas, náuseas y cólicos abdominales en el 100 % de los afectados, los alimentos implicados en el brote fueron el estofado de cordero y el pescado frito y los agentes etiológicos del brote el Bacillus cereus tipo diarreico y/o el Estafilococo aureus coagulasa positiva debido a una mala refrigeración de los alimentos y una inadecuada manipulación de estos.Downloads
