Toxi-infección alimentaria
Abstract
Las enfermedades relacionadas con la contaminación de alimentos causan 76 millones de enfermedades, 325 000 hospitalizaciones y 5000 muertes en el mundo cada año. Escherichia coli es productor de toxina Shiga es un patógeno emergente asociado a enfermedades transmitidas por alimentos. Los serotipos de de la toxina Shiga asociados a enfermedades severas en el hombre pertenecen a la categoría de E. coli enterohemorrágico. La toxina Shiga actúa y destruye los glóbulos rojos, lo cual conduce a insuficiencia renal y en casos severos provoca convulsiones y complicaciones graves en el sistema nervioso. La bacteria Escherichia coli productor de toxina Shiga se propaga principalmente en comida o agua contaminada o por contacto con animales enfermos. Dada la alta incidencia en el mundo de estas enfermedades se persigue como objetivo en este trabajo presentar una revisión bibliográfica del tema donde se recogen las últimas investigaciones reportadas hasta el primer trimestre del 2012.Downloads
